The aroma feels warm and dessert-like without becoming overly heavy.
Butterscotch remains the dominant flavor once tasted. It is smooth, rich, though not sweet, with a little agave still present underneath. The French oak aging gives it a rounded, mature character, but the oak itself does not take over the way it can in some older tequilas. The result is very approachable for an extra añejo: flavorful and rich, but still easy to drink.
Maple returns on the finish alongside the butterscotch, giving the tequila a warm, lingering unsweetened butterscotch. A hint of agave remains, and there is just a touch of spice at the end. The spice is subtle enough to add contrast without interrupting the smooth profile.
San Matias Gran Reserva is an enjoyable extra añejo with a rich, unsweetened butterscotch-forward profile, supported by maple, mild agave, and a touch of spice. Its 36 months in French oak give it depth and maturity, but it never feels overly woody or heavy. What stands out most is how approachable it is. It delivers the richness I would expect from an extra añejo without becoming overly intense. It is also slightly different from many of the other aged tequilas I have tried. Rather than leaning heavily on vanilla, caramel, or oak, this one puts butterscotch and maple front and center. At the right price, this is an easy tequila to recommend and one I would happily return to.
